1/2cupwhole grain brown rice, quinoa, millet, etc.
1butternut or acorn squash
1handfulorganic spinach
applea few slices for sweetness
avocadoa few slices of ripe avocado for healthy omega fats!
vegetable brothor water, but broth is tastier for desired consistency
Instructions
Steam squash and apple until tender. Remove from heat (keep the lid on) and add spinach. When spinach is limp, put veggies, grain, avocado and basil leaf into blender and blend. Add broth as needed. You can add extra grain at the end to make it chunkier for toddlers.
I make a variation of this almost everyday. The apple tastes great with the basil. I rotate veggies for variety: carrots, green beans, asparagus, swiss chard, etc. The added apple serves as a sweet touch to "hide" powerful tasting veggies so I sneak in as many leafy greens as possible. Not that Kula Baby really has a choice in the matter just yet, but I'm practicing for when he learns the word NO.
