GREEN MASHED POTATOES
Green Mashed Potatoes
Ingredients
- 1 yukon gold potato
- 1 leaf fresh basil
- 1 large leaf swiss chard
- 1/2 summer squash
- 1/4 avocado
Instructions

Bake potato for 1 hour OR slice and steam for 20 minutes.

Steam squash for 10 minutes. Add fresh chard and basil and let sit for 2 minutes (the chard will limp slightly but retain nutrients this way). Add avocado and blend all ingredients together.

Use veggie broth or water if liquid is needed to reach desired consistency.

Optional nutrient booster: add nutritional yeast to make these "cheesy green potatoes."
