Last year my son went through a very picky eating phase. This started about the time he turned 4. Suddenly instead of being open to trying the food I served for dinner, he wasn’t interested in trying anything. He wanted a hamburger instead. Or worse…a hot dog. We’d just moved to Argentina (we are here a year and a half for my husband’s work) and I’m afraid to say I could not find the grass-fed, artinesal hot dogs of our Whole Foods past (Oh Whole Foods, how I miss you charging me 10 dollars for a package of hot dogs). Instead all I found was a scary list of ingredients packed into something that resembled a hot dog and never in a million years would I allow my son to eat it every night.
NO WAY.
So during my son’s 4th year of life, I found there were a few recipes he ate every time I served them. Now he is almost 5 and a half and his picky eating tendencies are improving, however, I still use these recipes frequently when feeding my kids. I know I’m not the only one with a few no fail, kid-friendly dinner recipes in my back pocket so I asked a few of my favorite bloggers to share their own favorite recipes. Thanks for the recipes. I’ve tried the cheesy cauliflower nuggets and the chicken croquettas for my 15 month old son. After 5 attempts he still won’t eat the cauliflower nuggets. However, ALL he wants to eat are the chicken croquettas! I made them with Italian bread crumbs and baked them in the oven. They freeze wonderfully. Pop 3 or 4 out and it’s an easy dinner with some pureed apples and cheese.
