Apples are something we eat a lot of in our house. Hot, cold, juiced—it doesn’t really matter, we all love them. Currently my daughter’s go-to snack is baked apples with cinnamon. She loves them and could eat baked apples 3 meals a day if I let her.
Stewed or baked apples are particularly soothing and healing for the digestive tract so I like to offer them to my kids as a healthy breakfast, lunch or snack. The bacon in this recipe adds some protein for a more complete meal. This recipe is the perfect breakfast to warm you up on a cold winter’s day, enjoy!
- 1 apple
- 3 strips organic bacon
- coconut oil
- cinnamon to taste

Peel and slice the apple into small squares. You could also shred the apple in a processor to make this an apple hash.

In a frying pan over medium heat, melt one teaspoon of coconut oil and add bacon. Cook bacon until crispy (to your liking). Remove bacon with a slotted spoon and set aside.

Pour out half of the oil (I reserve the oil in a glass container for future use). Add the apples to the pan and continue cooking until apples are soft (depending on size of your apple slices about 5-8 minutes).

Sprinkle apples with a dash of cinnamon and a dash of salt.

Remove apples from pan, place in a bowl and crumble the bacon over the apples.

I topped mine with cubed avocado.
