Roasted Asparagus

They’re HEEEEERRRREEEE!  Asparagus reappeared at our farmer’s market last weekend and I’ve been living on roasted asparagus ever since.  Kula Baby is officially a fan of his new green finger food.  He loves it when I give him the whole asparagus at once.  He does not love it when I cut the asparagus up into small pieces.  Do I think he’s a BABY or something?  Sheesh.

Roasted Asparagus

1 bunch of organic asparagus

2-3 tbsp grapeseed oil (or another oil suitable for high heat)

1 clove of garlic chopped

salt and pepper to taste (a sprinkle of each will do)

Directions:

Wash asparagus and snap off the ends.  In a bowl, mix the asparagus with oil, garlic, salt and pepper.  Place asparagus on cookie sheet and cook in oven for 7-ish minutes at 375 degrees.
