Instructions
Put the oats in a food processor or coffee grinder and process until you have coarse flour. In a shallow bowl combine the ground oats, salt and garlic powder. In a second shallow bowl whisk the eggs together. Set aside.
Cut the chicken breasts into very small, bite sized pieces.
Dip the chicken into the egg mixture and then through the oat mixture until coated.
In a large frying pan, heat up your healthy oil of choice. I use about 2 tablespoons of ghee. Place the coated chicken pieces into the pan and shallow fry them for about 4 minutes per side or until the chicken pieces are cooked through (time will depend on size of your chicken pieces). You may choose to sprinkle with a little extra salt.
