Homemade Chocolate Granola Bars
In a mixing bowl combine quinoa flakes, chia seeds, cinnamon to combine.
In a saucepan over low heat melt the coconut oil. Add the maple syrup and vanilla, then sprinkle in 2 teaspoons of gelatin and whisk to combine.
Drizzle wet ingredients over dry ingredients and stir with a large spoon to combine.
Mix in the chocolate chips.
Spread out mixture in a prepared 8x8 pan. Press down with your hands or a spatula to spread out the mixture and pack it down.
Place in the fridge for 30 minutes.
Cut into bars and enjoy.
