
Why is quinoa quirky? Because it rhymes.
Quinoa is a very versatile grain. You can make it with veggie broth for savory dishes or with water if you want to use it with fruit. Both are yummy. Known as the “Grain of the Incas” quinoa touts high protein as one of its many benefits, due to the fact that it is a seed used as a grain. Quinoa is a great source of vitamin B6, vitamin E, fiber, phosporous, iron, copper, zinc and magnesium. Best of all? It tastes great.
Oh, and it only takes 15 minutes to make. Bless you quinoa!
1/2 cup quinoa
1 cup water
Fresh berries of choice
1/2 cup applesauce
Bring water and quinoa to boil and reduce to a simmer for 15 minutes or until the liquid is absorbed. Add fresh berries, blend if necessary and serve. I also serve quinoa and applesauce. Or I add yogurt to both for variety. Go crazy with it….quinoa goes with everything. Just like the perfect handbag. Which, by the way, I haven’t found yet.
Time saving hint: make a bigger batch of the grain and keep it in the fridge. Then it’s ready to be thrown into recipes easily for a day or two!
