
I use frozen organic peas for this dish because it is easy and I don’t want to shell peas on a regular basis. I don’t have the equipment for it…we don’t have a front porch or bucket of corn to shuck. So frozen peas it is for this modern mama.
1/2 cup frozen organic peas
1 mint leaf
1/4 cup cooked brown rice
Steam peas until warm. Put mint, peas and brown rice in blender and blend.
