1 leaf mint
sprinkle of orange peel (I use the dried version from Whole Foods)
1/2 cup grain of choice (today I used brown rice made with veggie broth)
1/4 of an avocado
1/2 teaspoon nutritional yeast (optional–I use it for added B vitamins and protein)
Steam carrots until tender. Add all ingredients into a blender and blend to desired consistency. I use veggie broth for extra liquid if I need it. I also use leftover brown rice so the whole process goes more quickly. Lunch on the go!
