Sooooooooo……I’m getting a little push back from Kula Baby during breakfast/lunch/dinner/snacks. By push back I mean clamping his mouth closed and throwing my freshly made meals to the ground. It’s been really fun. I’m going to admit something here. I thought I had the best eater ever. Kula Baby has eaten anything we put in front of him since he started eating solid food. I was getting too sure of myself. Picky eater? Not MY kid.
I’m starting to eat those words (yes, a pun).
Instead of getting frustrated I’m getting crafty (O.K. I get frustrated too
). Here’s my spin on spaghetti tonight. He LOVED it.
GOBBLE, GOBBLE SPAGHETTI
Spiral noodles (I used brown rice noodles)
Marinara sauce (I used organic tomato basil from Trader Joes)
1/4 cup ground turkey (I had some cooked already)
1/4 cup onion
1/4 cup broccoli, chopped
1/2 cup fresh spinach
1/4 cup zucchini, chopped
2 basil leaves
2 tbsp organic whole milk yogurt (plain) (this is optional. I find tomato sauce to be a little too acidic for Kula Baby and this cuts the acid taste for him–it seemed to work tonight.)
2 tbsp cheddar cheese (optional)
1 clove garlic (or use garlic powder if you don’t have a clove)
Saute onions and garlic until translucent. Add marinara sauce, cooked turkey and broccoli. Simmer sauce for 10 minutes. In blender add marinara sauce, raw spinach, raw zucchini, raw basil, yogurt and cheese. Blend to combine. You should have a thicker sauce now. Boil noodles for 7-10 minutes or until soft. Mix noodles with sauce and serve.
The raw spinach and zucchini go unnoticed in this mixture which means Kula Baby is getting more nutrients without ever being the wiser. He gobbled this up and looked at me as if to say: Pasta? SUCKER.
Heat destroys vitamins so keeping the greens as raw as possible in this recipe is key. I did heat the broccoli up though. I wasn’t feeling too sure about raw broccoli but if someone tries it, let me know!!!
