This recipe is my own variation of a recipe I found in a baby cook book. I need to search around for the book so I can list the name here however I think my husband is using the book as part of his home remodeling arsenal. Weird right? I found him drilling holes for the cabinet hardware in the kitchen the other day, using my cookbook as a buffer for the counter. It now has a hole in the cover. Better the book than the CaesarStone, right?
We were on vacation last summer visiting my family and they were astounded that I put so many spices in Baby Kula’s dinner. People kept walking into the kitchen and saying “yum, something smells GOOD!”. When they learned I was cooking for Baby Kula they couldn’t hide their surprise. Are babies allowed to eat something so tasty? My aunt commented that she thought baby food had to taste plain and bland. And we wonder why so many kids won’t eat anything. Babies are people too! They deserve tasty food!
Curry Potato Tot
3 small potatoes chopped (any kind will do, sweet potato, german butterball, red, mix it up!)
3 carrots chopped
1/4 onion chopped
1 small zuchinni chopped
1/2 cup lentils (red lentils are preferred, they cook the quickest)
1 cup veggie broth
1/8 teaspoon of each: curry, cumin, tumeric and coriander.
Add one cup of veggie broth to the lentils and bring to a boil. Reduce heat to a simmer and add in the veggies and spices. Cover and simmer for 20 minutes or until potatoes are tender. You can blend this if it is too chunky for your little one.
