GREEN MASHED POTATOES
- 1 yukon gold potato
- 1 leaf of fresh basil
- 1 large leaf swiss chard
- ½ summer squash
- ¼ avocado
- Bake potato for 1 hour OR slice and steam for 20 minutes.
- Steam squash for 10 minutes. Add fresh chard and basil and let sit for 2 minutes (the chard will limp slightly but retain nutrients this way). Add avocado and blend all ingredients together.
- Use veggie broth or water if liquid is needed to reach desired consistency.
- Optional nutrient booster: add nutritional yeast to make these "cheesy green potatoes."
